Watergate Salad

1 can (20 oz) crushed pineapple, in juice, undrained
1 pkg. (3.4oz) Jello Pistachio Flavor Instant Pudding
11/2 cup thawed Cool Whip Whipped Topping
1 cup mini marshmallows
1/2 cup chopped pecans

Combine ingredients and refrigerate for at least one hour before serving.







Aunt Lora’s Reception Salad

1 large can crushed pineapple
½ cup chopped celery
⅔ cup English walnuts
1 small package lemon jello
2 small pkgs cream cheese
⅛ tsp salt
½ pint whipping cream

Use juice of pineapple (heated) to make Jello. When Jello is “soft set” mix in pineapple, celery, nuts, cream cheese and salt. Mix well. Fold in whipped cream. Chill for several hours.












Pesto Vinaigrette



  • 1/3 cup basil pesto
  • 1/3 cup olive oil
  • 1/4 cup  balsamic vinegar (golden or white)
  • Mix together and enjoy




Copper Pennies

2 lbs carrots sliced
1 onion chopped
1 bell pepper chopped
1 can tomato soup
1/2 c oil
1c sugar
3/4 c apple cider vinegar
1tsp mustard
1 tsp Worcestershire 
Salt pepper garlic salt 

Slice and boil carrots in salt water until tender. Drain and cool. Add chopped onions and bell pepper to carrots. Mix together soup, oil, sugar, vinegar, mustard, Worcestershire sauce. Season with salt, pepper and garlic sauce. Pour mixture over carrots, onions and peppers. Chill overnight



Pasta Salad


2 bags of garden pasta
1 sm can of chopped olives
1 small sweet onion (chopped) fine
1 PK of dry ranch
1 lg block of cheese ( I used Colby  jack)
Cut in tiny pieces
1 bacon bits ( I use the real bacon bits)
And real Mayo enough to mix everything  together good......

Be sure and cool your pasta before mixing it in, by running under cold water










Three Bean Salad


2 cups green beans
2 cups red kidney beans
2 cups garbanzo beans
1 medium red onion chopped
1 cup red and yellow peppers diced
½ cup olive oil
½ cup sugar
½ cup white vinegar
salt and pepper to taste

Drain canned beans and rinse.Toss beans with onion and pepper.Combine the oil with remaining ingredients and pour over the beans.Chill at least 4 hours before serving.
